Homemade Raw Almond Butter (Naturally Gluten-Free)

May 13, 2010

This is as simple as it gets folks. I made this recipe in literally 5 minutes. All you need is a food processor, almonds (or any nut you like), oil, salt and honey. That is it. I am sure there are lots of other creative ways to make almond butter, but I will stick with the one that has worked best for me over the years. I have toasted the almonds before for flavor but I seem to always go back to the standard raw almond butter. Pecans, cashews and walnuts work well in this recipe. Also if you prefer agave, switch out the honey for agave  After I made the almond butter, I toasted some Canyon Bakehouse Cinnamon Raisin bread and spread the almond butter on top. It was a perfect snack to go along with a cup of hot tea. Enjoy!

1)      1 cup raw almonds

2)      1 tablespoon oil (I used canola, but grapeseed oil and macadamia nut oil have worked for me as well)

3)      Tiny pinch salt (optional)

4)      ½ tablespoon honey

Start by grinding the almonds to a coarse texture in the food processor.

Stream in your tablespoon of oil and continue mixing the nut mixture in the processor.

Add in the salt (optional) and honey and mix again.

The mixture should start looking creamy (still some grit) in appearance and it will start forming a ball.

Makes about 3/4 cup packed almond butter.

*note: Canyon Bakehouse products are available for sell at Whole Foods. They have several different gluten-free breads, focaccia and muffins. Their bread is fantastic in texture. It reminds me of Udi’s but more flexible. Great product! If you can’t make it to Whole Foods to purchase, they do offer online ordering.

I’ve been on a homemade nut butter kick lately, ever since I mixed up that walnut-cacao butter a couple of weeks ago. I simply adore homemade nut butters (and raw is even better!)–so easy and so much better for you than the store-bought kind! Yours sounds delish, not too sweet and perfect for cinnamon toast! 🙂

Thank you Ricki! Your walnut cacao butter sounds divine 🙂 I will have to make that sometime. Yes, I have been on a nut butter kick as well. They are just so easy to make! And they always taste better than the store bought kind! 🙂

Love the nut butters and really have to think about a food processor. The blender and I have such a time of it and last time we both ended up wounded. At this point I would go for any flavor!

I am curious what kind of food processor you used, and how old it is?
